Product Overview
The Hobart 1812RS Slicer is a professional-grade appliance designed for integration with Hobart SP80, SP1500, or SP21500 system printers. It features a high-quality solid stainless steel knife and is engineered for safety and efficiency in retail environments. Key safety features include a Power Interrupt system, a Gauge Plate Interlock that prevents removal of the carriage tray unless the gauge plate is closed, and a HomeStart function requiring the carriage to be in the home position before operation.
Installation and Setup
Upon unpacking, inspect the unit for shipping damage. Ensure the electrical supply matches the specifications on the machine data plate. The slicer must be connected to a properly grounded three-prong outlet. Assemble the carriage tray and scale platform according to the provided diagrams. The scale platform should be leveled by adjusting the slicer legs until the bubble is centered.
Operation
To operate, place the product on the carriage tray and secure it with the meat grip. Use the index knob to set the desired slice thickness. Press the ON button to start the motor. Always use the meat grip to keep hands away from the blade. When finished, turn the index knob back below zero and press the OFF button. Always unplug the machine before cleaning or moving it.

Cleaning and Sanitization
The slicer must be cleaned and sanitized after each day of operation. Unplug the power cord and turn the index knob fully clockwise. Use a mild detergent and hot water solution with a clean cloth. Remove the top knife cover and deflector for thorough cleaning. Clean the ring guard by carefully working a cloth between the knife and the guard. Never use steel pads. Rinse with fresh water and allow to air dry. The scale platter and platform are removable for separate cleaning.
Maintenance and Lubrication
Knife sharpening should only be performed when necessary. Use the integrated sharpener by following the specific sequence of lifting the handle to a horizontal position and pulling it forward for five seconds. Lubricate the carriage slide rod reservoir monthly using the supplied Lubriplate FM0-200-AW lubricant. Do not use vegetable oil. Gauge plate slide rods should also be lightly coated with the same lubricant. The motor features sealed bearings and requires no lubrication.
