Quick guide from the manual

The Breville Sous Chef 12 is a high-performance food processor designed for household use. Before using the appliance, ensure all packaging materials and promotional labels are removed. Always handle blades and discs with extreme care as they are razor-sharp. The appliance features a safety interlock system that prevents the motor from starting unless the bowl, lid, and large pusher are correctly assembled and locked in place.

Components

The food processor includes several key components:

Assembly steps
Assembly steps
  1. Place the processing bowl onto the motor base, aligning the handle with the 'ALIGN HANDLE' graphic.
  2. Turn the bowl clockwise until the handle locks into the front position.
  3. Insert the spindle into the center of the bowl. The spindle is required for all discs and blades.
  4. Place your chosen blade or disc onto the spindle.
  5. Place the lid onto the bowl, aligning the 'ALIGN | LOCK' graphics on the lid and handle. Turn the lid clockwise to lock it. The motor will not start unless the lid is securely locked.

Operation

The appliance is controlled via the POWER | OFF, START | PAUSE, and PULSE buttons:

Lid locking mechanism
Lid locking mechanism
  • POWER | OFF: Switches the unit on and puts it into READY mode.
  • START | PAUSE: Runs the motor continuously. If the lid or bowl is removed during operation, the motor stops and the button flashes.
  • PULSE: Ideal for short bursts of power, useful for chopping or processing delicate ingredients.

Always use the pusher to feed ingredients; never use your hands. Do not fill the bowl above the MAX line.

Food processing tips

For best results, cut ingredients into 1-inch (2.5cm) cubes before processing. When processing dough, do not exceed 5 cups (700g) of flour. If the motor slows down, process in smaller batches. Do not process hot or boiling liquids; allow them to cool first. Always use the pulse button for chopping herbs, nuts, and vegetables to maintain control over the consistency.

Care and cleaning

Always unplug the appliance before cleaning. The bowl and lid can be washed in the top shelf of a dishwasher, but hand washing is recommended to prolong the life of the plastic and interlock components. Use warm, soapy water and a soft cloth. Do not use abrasive cleaners. Store the unit with the bowl and lid resting in position but not locked to avoid strain on the safety interlock.

Troubleshooting

If the motor does not start, ensure the bowl, lid, and large pusher are correctly assembled and locked. If the motor shuts off during operation, it may be overloaded; unplug the unit and let it cool for 20-30 minutes. If the food is unevenly processed, cut ingredients into smaller, uniform pieces and process in batches.
