Important Safety Information

Before performing any cleaning or maintenance, always turn off the unit and unplug it from the electrical outlet. Ensure the machine has cooled completely. Always wear cut-resistant gloves to protect yourself from the sharp blade. The manufacturer is not responsible for injuries resulting from improper operation.

General Cleaning

Regular cleaning prevents product buildup and ensures safe operation.

• Clean and remove excess product from the scraper.
• Wipe down all touched surfaces.
• Remove all excess product buildup.

Daily Cleaning & Maintenance

Follow these steps daily to maintain hygiene:

1. Turn off, unplug, and allow the unit to cool completely.
2. Wear cut-resistant gloves.
3. Remove and discard excess food material.
4. Inspect the unit and blade for breakage or corrosion.
5. Wipe down all surfaces with hot, soapy water and allow to air dry completely before the next use.
6. Remove the scraper by loosening the scraper protection knob and pulling the scraper blades toward you.
7. Clean parts using a standard three-compartment sink method: wash in hot, soapy water with a long bristle brush, rinse with hot water, and sanitize with Noble Chemical QuikSan Sanitizer.

Monthly Cleaning

In addition to daily cleaning, perform the following monthly:

• Inspect the unit for any breakage or corrosion on any parts.
• Clean the blades with hot, soapy water and towel dry.
• Apply a coat of food-grade oil to the blades to prevent rusting.

Blade Replacement

If the blade needs replacement, follow these steps:

1. Open the upper and lower cavity doors.
2. Loosen the tension knob at the top to remove the blade from the wheels.
3. Loosen the scraper protection knob just enough to take the scraper off the machine.
4. Clean the blade and scraper with hot water and a brush.
5. Replace the scraper and tighten it in place by adjusting the scraper protection knob.
6. Place the new blade over both wheels, ensuring it faces forward with the teeth flush with the edge of the wheel.
7. Secure the blade by tightening the tension knob.
8. Close both the upper and lower cavity doors.
