This manual covers the installation, operation, and maintenance of Avantco commercial countertop gas equipment. Important: This equipment is intended for industrial/professional use only. Always observe local and national codes. Installation must be performed by qualified and authorized persons. Ensure the gas pressure regulator is installed, as failure to do so will void the warranty.
Installation
Upon receipt, verify the accessory kit includes the gas pressure regulator, instruction manual, gas conversion kit, and lighter. Position the product carefully and adjust the foot level. Ensure adequate space is left in front of the device for maintenance and operation. Gas supply piping must be at least 3/4" in diameter.

Gas Conversion
Products are manufactured for natural gas (NG). If propane (LPG) is required, conversion must be performed by a licensed technician. The process involves inverting the fitting under the regulator cover and replacing the burner injectors with those provided in the kit. Always apply pipe sealant to valve threads when installing new injectors.

First-Time Use
Remove all protective PVC film, plastics, and straps. Clean the equipment with a mild detergent and water. For griddles and charbroilers, burn off manufacturing residue by turning the burners on for approximately 15 minutes before initial use.
Operation
To ignite the burners:

- Open the manual gas supply valve.
- Light the igniter (wick) provided.
- For pilot models, press and rotate the handle to the pilot position, ignite the pilot, hold for 10 seconds, then rotate to the desired temperature.
- For manual models, ignite the pilot burner, then turn the corresponding knob counterclockwise to light the main burners.
Cleaning and Maintenance
Clean the equipment daily after use. Use a non-abrasive sponge with mild detergent. Never use sharp or abrasive materials on stainless steel. Do not flood a hot griddle with cold water, as this may cause warping. Maintenance should only be performed by an authorized technician.
