Operation

Follow these steps for safe and effective slicing:

  • Pre-use check: Strum the dull side of the blades to ensure uniform vibration and proper tension. If blades are loose or broken, they must be serviced.
  • Setup: Position the slicer on a stable table or counter. Ensure the positive stop pivot arm is over the edge to hold the unit securely.
  • Slicing: Use the Tomato King Scooper to remove stem scars. Place the tomato top-down on the platform against the pusher head and blade. Use a quick push to move the tomato through the blades.
  • Limitations: Use only for soft foods like tomatoes, mushrooms, and strawberries. Hard foods like onions or lemons will break the blades.
  • Lubrication: Lubricate guide rods with mineral oil or Petro Gel after each use. Do not use cooking oil, as it becomes sticky and can permanently damage the pusher head bearings.

Cleaning

Clean the equipment daily to maintain performance and hygiene:

  1. Retract the handle to the most open position.
  2. Rinse or spray the equipment with HOT water. You may immerse it in warm, soapy water.
  3. Do not use scrub pads or wipe across the sharp edges of the blades.
  4. Do not use a dishwasher or harsh alkaline chemicals.
  5. Allow the equipment to air dry completely.
  6. Lubricate sliding parts with mineral oil or Petro Gel.

Replacing Blade Assembly

If the slicer no longer cuts cleanly, the blades may need replacement. Never mix old and new blades in the same assembly.

  • Ensure you have ample room on a flat, dry surface.
  • For Tomato King: Close the pusher head so fingers are through the blades against the pin stop.
  • For Tomato Pro/Econo Pro: Pull the pusher head back against the back stop.
  • Remove the four blade block screws (two at each end). Retain the rubber seals.
  • Install the new assembly, ensuring it is centered between the bridge casting posts.

Adjustments

If the pusher head fingers do not slide effortlessly through the blades, adjustments are required:

  • Fingers: If fingers are nicked or burred, smooth them with a small flat file. Straighten any bent fingers.
  • Alignment: Insert a screwdriver between the slots in the pusher head assembly. Gently tap the screwdriver up or down to align the fingers so they slide through the blades without contact.
  • Tightening: When tightening blades, use an alternating sequence (Top Right, Bottom Left, Bottom Right, Top Left) to ensure even tension.

Troubleshooting

If the equipment fails to process food cleanly:

  • Broken Blades: Often caused by using the wrong food, incorrect blade tension, misaligned fingers, mixing old/new blades, or dull blades.
