Controller and Operation

The unit features a 6-inch glove-safe touchscreen control panel. Available chilling modes include:

  • Standard Chilling: Maintains air temperature at 10-15°F; completes when food probes reach 37°F.
  • Speed Chilling: Maintains air temperature at 0-5°F until product reaches 70°F, then adjusts to 10-15°F.
  • Delicate Chilling: Maintains air temperature at 30-35°F; completes when food probes reach 37°F.
  • Blast Freezing: Maintains air temperature at -25 to -20°F; completes when food probes reach 0°F.
  • Cold Holding: Automatically enters holding mode at the end of a cycle (34-40°F after chilling, or 0-5°F after freezing).
  • Auto-Start: Initiates a standard chilling cycle automatically when a probe is inserted into cooked product.
  • Quick-Start: Programmable one-touch button for a 90-minute standard cycle.

The unit also includes a USB HACCP interface for downloading data.
