Plunger Assembly

  1. Slide the plunger seal onto the plunger.
  2. Assemble the pressure release valve kit: place the washer on the valve hole, insert the spring and valve cap from the underside, and secure with the screw top.
  3. Attach the assembled plunger to the plunger shaft.

Manual Stuffer Assembly

  1. Attach the handle to either the fast or slow gear.
  2. Rest the canister bottom brackets onto the mounts inside the housing.
  3. Pivot the canister into the housing and snap the top brackets into place.
  4. Insert the desired funnel through the front ring nut and screw onto the canister mouth until snug. Do not overtighten.

Motor Assembly

  1. Lower the plunger to the halfway position using the handle, then remove the handle.
  2. Insert the motor plug into the socket on the stuffer body.
  3. Slide the motor onto the slow drive shaft, aligning the mounting thumbscrews.
  4. Tighten the 3 thumbscrews to secure the motor.
  5. If using the foot pedal, plug it into the underside of the motor while the unit is disconnected from power.

Operation

Motor Operated Stuffing

  1. Plug in the power cord and press the POWER button.
  2. Press UP to raise the piston, remove the cylinder, fill with mixture, and reinstall.
  3. Press DOWN to extrude the mixture. Use the speed dial to control the piston speed.
  4. Press STOP to halt the piston.
  5. If using the foot pedal, depress it to lower the piston; release to stop.

Manual Stuffing

  1. Tilt out the canister and fill with mixture.
  2. Pivot the canister back and snap into place.
  3. Turn the handle to extrude. Fast gear: Clockwise to raise, Counter-clockwise to lower. Slow gear: Counter-clockwise to raise, Clockwise to lower.

Cleaning & Maintenance

  • Always unplug the motor before cleaning.
  • Do not immerse the motor in water or place in a dishwasher.
  • Remove the funnel, canister, plunger, and pressure release valve.
  • Wash all meat-contact parts in hot water with mild detergent.
  • Clean the motor exterior with a damp cloth.
  • Lubricate the shaft, canister, pressure-release valve, and front ring nut with food-grade lubricant before and after each use.

Stuffer is hard to crank

Add water or oil to the meat mixture; lubricate the piston gasket and cylinder interior.
